Apple pies are a family favourite, but these quick to make baked apples are sure to give them a run for their money. Baked whole and stuffed with golden crumble, this 30-minute dessert is guaranteed to be on repeat in your family for months to come.
Serves: 6 Prep time: 10 mins Cooking time: 30 mins
Ingredients:
6 medium apples
½ cup whole oats
A quarter cup desiccated coconut
A quarter cup mixed seeds
2 tbsp coconut sugar
30g butter
Method:
Step 1:
Preheat your oven to 190°C and grease a medium size ovenproof dish. Using a sharp paring knife or an apple corer, remove the apples cores so a 2-3cm hole remains.
Step 2:
Combine all remaining ingredients except the butter in a bowl. Divide the mixture evenly between each of the apples, being sure to press it in firmly you want the mixture to be packed in tight.
Step 3:
Slice the butter into cubes and place one on top of each apple. Add any remaining oat mixture to the dish and bake in the oven for 30 minutes or until the apples are just soft.
Serving suggestion:
Serve with natural yoghurt or a spoonful of ice cream. The apples are just as delicious cold so if you have leftovers, add them to a container and pack them in the kids lunchboxes for a surprise treat at school.
