There’s fast and then there’s almost instant supper. When it tastes so fabulous that it could be eaten every second night and is full of all the good things ... You could say this meal ticks a whole lot of boxes.

Ingredients
2 tbsp olive oil 1 red onion 1 garlic clove 1 tin cherry tomatoes ¼ cup stock 2 sprigs fresh thyme 1 tin sustainably sourced tuna 2 tbsp olives chopped 300g pasta
Instructions
Heat the oil in a large, deep-sided pan or casserole dish. Fry the onion and garlic for a few minutes until softening up, add the tin of tomatoes, the thyme sprigs and the stock and leave to bubble as the pasta cooks. (Approx 10 minutes). As you drain the pasta, add the tuna and olives to the sauce and stir through well. Tip the pasta into the sauce and mix it well together.
