Ingredients
2 fillets white fish (snapper/whiting), cubed 1 small zucchini, sliced 1 sweet potato, cubed 4 mushrooms, quartered 90 g (½ cup) corn 40 g (½ cup) kidney beans ghee 1 onion, finely sliced ½ purple cabbage, finely shredded 6 small corn tortillas 1 bunch coriander, chopped 1 ripe avocado, cubed 6 – 8 cocktail tomatoes, halved sour cream salt and pepper salsa 1 lime, cubed
Method
Preheat a skillet to medium heat. Lightly grease the surface with ghee, cook onion until slightly golden. Then add fish, veggies and beans and quickly stir fry them. Evenly distribute cabbage onto corn tortillas. Then add stir fry mixture, coriander, avocado and tomatoes onto tortillas. Drizzle with sour cream, lime and season to taste. Serve warm with fresh salsa and lime wedges.
